Anyway as there be no Easter eggs for me – just yet. I decided to do some baking and bakes some yummy banana and pecan Cookies.
As I’m doing the BHF dechox month, this is where I have given up chocolate for the whole of March. So yes this does include during Easter, and yes there will be no chocolate for me. However don’t cry for me as I think it a good thing really as I got a bad tooth at the moment which is really hurting me – so if I could eat all the chocolate I wanted, I couldn’t really as this bad tooth would start hurting me again.
I will show you how to make these. Trust me these banana and pecan cookies are delicious.
Ingredients:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 8 tablespoons unsalted butter, softened/melted
- 6 tablespoons granulated sugar
- 6 tablespoons light brown sugar
- 1 large egg
- 1 teaspoon cinnamon
- 1-2 very ripe banana, slightly mashed
- 3-5 cup pecans nuts
Direction:

Preheat the oven to approximately 375 degrees. Butter or line 2 baking sheets.

Whisk together the flour, baking soda, and salt.

In a large bowl, beat together butter (it helps if the butter is melted), sugars, egg, and cinnamon. Add the flour mixture and stir to combine. Mix in the banana and pecans until just combined.

Drop by the tablespoons onto the baking sheet, spacing dough an inch apart. Bake for 10-12 minutes, until lightly golden brown. Remove to cooling racks.
And voila you get these amazing banana and pecan Cookies.
